We sat, Himself and I, mug of tea each and ginger biscuits for three (Willow) and as we cronched them we both agreed that they were not particularly gingery - Willow on the other hand just cronched and wanted more declaring them the most delicious thing eaten EvEr!
So we (and still eating biscuits) reminisced about the collies that we have had and how they all seemed to love ginger biscuits then Himself remembered it was actually our second 'bordering on a collie' (pretty sure she was just barely a hint of collie) Cleggy came with a predilection for the gingery snack. Moss who was full on, top notch registered border collie but worth nothing to the farming community due to her inability to be a working dog, she too said that yes - ginger biscuits were yum.
Now Willow, who was sitting quietly minding her own business, leapt up and asked could she too have a biscuit as they were of the ginger type and scoffed them and inhaled the crumbs. Any hoo - where this is leading to is -
1. Are ginger biscuits generally less gingery and seem more sweet than before?
2. Do all collies have an affinity for a cronchy ginger biscuit?SO! I then remembered that a couple of years ago I made a load of Swedish Pepparkakor - Ginger biscuits and decided to do it again. When adding the spices I tasted the dough (which was yum BTW) I upped the ginger from one teaspoon for a heaped tablespoon and suddenly it tasted right!
A small and red dog decided that being in the kitchen Was.The.Place.To.Be whilst things smelt warm and gingery and now that the biscuits are out she keeps popping in to 'check if they are cool enough to eat' - well that is what she has told me.....
If you fancy making some here is the link and I didn't bother with the 'let it sit for 24 hours' I just bunged it in the fridge for the time it took to wash up, wrap three birthday pressies and make a brew -then I rolled the dough out and voila - Sweddish(esqe) Pepparkakor Pigs and Hearts.I have just eaten one - hmmm - not bad, but not quite what I was looking for - the quest continues!
Do you have a suitable punchy ginger biscuit recipe? Or am I just chasing a ginger pimpernel ๐
I'm not a fan of ginger biscuits, hubby loves them, I do like a soft ginger cake.

ReplyDeleteSift 350g self raising four, 1 teaspoon bicarbonate, 3 teaspoons ginger, 200g caster sugar into large bowl.
Melt together, 115g butter and 85g golden syrup.
Cool a little then add to dry ingredients.
Add one large beaten egg.
Mix thoroughly, roll into walnut sized balls, onto tray and flatten slightly. Leave room to spread. Bake at 170c for 15-20 minutes ‘til golden.

ooh yum - I shall be trying those once these Pepparkakor have been eaten - Himself is now home and making a serious dent in the pile of biscuits, so no worries there.
DeleteI sometimes add cinnamon and cardamom to my ginger biscuits, to give them a stronger flavour. I think they are delicious however you choose to make them :)

ReplyDeleteEllie was half collie, half springer spaniel, and her last meal, after having rejected some brie bought specially for her by the vet, was a piece of ginger cake which she almost swallowed whole she loved it so much. It was the first time she'd tasted ginger.
It's funny that a spice that is not an animal food seems to appeal to dogs - whatever the reason, I am glad Ellie enjoyed her last nibbles and it was ginger cake :)
DeleteI love a Cornish fairing myself…homemade of course! I always seem to add more of every spice called for in recipes…what use is 1/4 tsp when you want to taste something! X
ReplyDeleteI had to look up a Cornish Fairing and I like the look of the recipe, certainly tempted to give them a try - but I will increase the ginger quantities - yum !
DeleteWe have a family recipe for Grantham Gingerbreads which are yummy (but have a a high sugar content, so more of a treat now and then). They are a chunky biscuit which has hollow areas inside. I can send the recipe if you would like it, although it is on the internet if you search! I also have a recipe for 'Firework biscuits' which are also a nice ginger biscuit and good for dunking, similar to the recipe quoted above and they can be made with butter or vegan alternative. We love a ginger biscuit here too - we're with Willow on that one! (I also have a nice recipe for a Yorkshire Parkin sponge/sponge Parkin which has ginger and mixed spice in it and is perfect for autumn or as a pudding with custard.) I feel really hungry now!

DeleteI have to smile-- I've been on a quest for the perfect gingery ginger cookie (as we call them in the states) for more than a month. I've been tweaking recipes here and there. Why isn't is spicy? Is my ground ginger too old? Have my tastes changed? What if I add chopped candied ginger? I got close when I added fresh grated ginger to the mix. Getting there... maybe I'll try your recipe next!
